Introduction:
This is Maharshtrian's one of the most common breakfast dish. This is a healthy way to use up leftover rotis. Addition of vegetables even makes it one step healthier. It also makes great lunch or evening snack option.
Ingredients:
5 leftover Chapati
2 tbsp Oil
1 cup Onion finely chopped
3 to 4 Green chillies
8 to 10 Curry Leaves
1 tsp Cumin Seeds
1 tsp Mustard seeds
1/8 tsp Hing
1/4 tsp Turmeric powder
Salt to taste
Sugar to taste
1 cup finley chopped Spinach Leaves
Method
Take chapati and break it down roughly.
Now put the chapati pieces in to food processor and process till it gets coarse texture.
Remove the chapati crumble in separate dish.
Heat oil in a pan.
After the oil is hot add mustard seeds and let them dance around.
Then add cumin seeds and let them sizzle too.
Add hing and mix.
Add onion followed by curry leaves and green chillies.
Mix well and saute onions till it gets light golden color.
Then add chapati crumble with salt and sugar to taste and mix well.
Add spinach leaves, mix, cover and cook for 5 mts.
Serve hot with a drizzle of lime juice!
