Introduction:
Diwali celebration is incomplete with sweet and it adds more charm to the celebration with any home made Diwali dish. So here's this mouth watering, melt in mouth Rava Coconut Laddu recipe. It does need little preparation but its all worth it!

Serves : 4 to 6 people
Ingredients:
1 cup Fine Rava / Sooji
1 cup fresh grated Coconut
2+1 tbsp Ghee
1 1/4 cup Sugar
1/4 cup water
1/4 tsp Cardamom powder
Raisins for Garnish
Method
Take the fresh coconut and grate it using fine holes of the grater. Be sure to grate only white side of the coconut and not its skin or brown part.
Now take fine sooji in to pan, add tbsp of ghee, mix, start heat on medium high heat and dry roast for 6 to 7 minutes.
After rawa is roasted take that out on to separate dish.
Now in the same pan add grated coconut with a tbsp of ghee, mix and dry roast over medium heat for 3 to 4 minutes.
Now take out coconut and put that in to roasted sooji.
Now mix roasted sooji and coconut together.
Now take sugar in to pan, add water to that, bring that to boil over high heat.
After it comes to a boil, lower the heat down and cook the syrup for 4 to 5 minuts or until it gets little thick or close to single thread consistency.
After syrup is done, turn the heat off.
Add the roasted rawa coconut mixture in to syrup and mix well.
Add cardamom powder, mix, cover and allow it to rest for an hour or until all the syrupm gets soaked in sooji.
Give the mixture stir in between.
After the mixture becomes thick, grease your hand very well with ghee and take a bigh tbsp of mixture and roll that in to lemon sized ladoos.
Top up ladoo with raisin or your favorite topping.
Store in air tight container.
Tips
Roast rava and coconut very lightly. You don't need to make it brown otherwise the laddos would not gets bright white color.
Add the nut as per you taste.
The ladoos stays good for up to a week.
In place of fresh coconut you could also use frozen coconut.
